Step-by-Step Instructions
  1. Season chicken with salt, pepper, and Cajun seasoning. Heat oil in Dutch oven. Sear chicken for 5-7 minutes on each side until golden, then shred.
  2. Reduce heat, add onions, garlic, bell pepper, and jalapeños. Sauté for 5-6 minutes until softened.
  3. Add chicken broth and drained beans, stir and sprinkle Cajun seasoning. Return chicken to pot and simmer covered for 20-30 minutes.
  4. Lower heat, stir in cream cheese and heavy cream until melted. Add lime juice.
  5. Ladle into bowls, garnish with cilantro and jalapeños. Optional: serve with toppings like sour cream or cheese.
