  • 1 sprig rosemary Finely diced.
  • 1 tsp smoked paprika Introduces warmth and subtle smokiness.
  • 1 tsp cinnamon Optional to taste.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Peel and cube the butternut squash into smaller pieces and pulse in a food processor until finely chopped.
  3. Finely chop the onion and mushrooms, then transfer them to the same bowl with the finely processed butternut squash.
  4. Add the ground breakfast sausage, diced rosemary, smoked paprika, and optional cinnamon, and mix everything well.
  5. Form small golf-ball-sized meatballs and place them on the prepared baking sheet.
  6. Bake for about 40 minutes until golden brown and internal temperature reaches at least 160°F (71°C).
  7. Allow the meatballs to cool on the baking sheet for about 5 minutes before serving.
