- Preheat your oven to 375°F (190°C).
- Cut the bell peppers in half lengthwise, removing the seeds and stems.
- Add a little water to the baking dish and steam the bell pepper halves for about 5 minutes.
- In a mixing bowl, combine hot sauce, butter, kosher salt, garlic powder, and onion powder.
- Stir in the shredded chicken, Greek yogurt, and half of the cheese until well incorporated.
- Fill each bell pepper half with the chicken mixture.
- Sprinkle the remaining cheese, feta or blue cheese, and half of the chopped green onions on top.
- Cover with foil and bake for 30–35 minutes until tender and bubbly.
- Remove foil and let cool slightly before garnishing with remaining onions.
