- In a stand mixer, combine the room temperature unsalted butter with organic cane sugar, confectioners sugar, and sea salt. Beat until creamy, about 3-5 minutes.
- Add vanilla extract, vanilla bean paste, and bourbon, mixing well. Gradually add the unbleached all-purpose flour until a dough forms.
- Divide the dough into two portions. Shape into logs about 2 inches thick or discs, wrap in plastic wrap, and refrigerate for at least 2 hours.
- Preheat your oven to 350°F (175°C). Brush tops of logs with egg white and sprinkle raw sugar for added crunch. Slice logs into 1/2-inch thick cookies.
- Bake from 12-15 minutes or until edges turn lightly golden. Let cool completely before transferring to a wire rack.
