- In a blender or food processor, combine the plain Greek yogurt, fresh lemon juice, mustard, and extra virgin olive oil. Add in the chopped fresh herbs along with a sprinkle of salt and pepper. Blend until the mixture is smooth and creamy, about 30 seconds.
- In a large mixing bowl, add your super greens mix and chopped kale. Next, slice the strawberries and toss them into the bowl along with the blackberries and blueberries.
- Sprinkle the pistachios and pepitas over the mixed greens and berries. Give everything a light toss to incorporate the crunchy elements without crushing the delicate berries.
- Drizzle the creamy lemon herb dressing generously over the assembled salad. Using tongs, gently toss the salad to ensure an even coating.
- Finally, crumble the blueberry goat cheese over the top of the salad. Add a dash of freshly ground pepper for extra flavor. Serve immediately.
