Preparation
  1. In a blender or food processor, combine the plain Greek yogurt, fresh lemon juice, mustard, and extra virgin olive oil. Add in the chopped fresh herbs along with a sprinkle of salt and pepper. Blend until the mixture is smooth and creamy, about 30 seconds.
  2. In a large mixing bowl, add your super greens mix and chopped kale. Next, slice the strawberries and toss them into the bowl along with the blackberries and blueberries.
  3. Sprinkle the pistachios and pepitas over the mixed greens and berries. Give everything a light toss to incorporate the crunchy elements without crushing the delicate berries.
  4. Drizzle the creamy lemon herb dressing generously over the assembled salad. Using tongs, gently toss the salad to ensure an even coating.
  5. Finally, crumble the blueberry goat cheese over the top of the salad. Add a dash of freshly ground pepper for extra flavor. Serve immediately.
