For the Kofta
  • 1 pound Ground Beef 80/20 lean-to-fat ratio
  • 1 Onion Finely chopped
  • 3 cloves Garlic Minced
  • ¼ cup Parsley Finely chopped
  • 1 teaspoon Ground Cumin Freshly ground recommended
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper Adjust to taste
For the Garlic Yogurt Sauce
  • 1 cup Plain Yogurt Whole milk or Greek recommended
  • 1 tablespoon Lemon Juice Freshly squeezed
  • 1 clove Additional Garlic Minced

Method
 

Preparation Steps
  1. Finely chop one onion and mince three cloves of garlic. In a large bowl, combine the ground beef, onion, garlic, parsley, ground cumin, ground coriander, salt, and black pepper. Mix thoroughly with your hands or a spoon until well incorporated.
  2. Cover the beef mixture with plastic wrap and refrigerate for 30 minutes.
  3. Shape the beef mixture into oval patties or mold around skewers for kebab-style koftas.
  4. Preheat your grill or a grill pan over medium-high heat for about 5 minutes.
  5. Carefully place the koftas on the hot grill and cook for 8-10 minutes, turning occasionally.
  6. In a bowl, combine yogurt, minced garlic, lemon juice, and a pinch of salt and black pepper. Mix until smooth and creamy.
