Ingredients
  

For the Jackfruit
  • 1 can Young Jackfruit rinsed and shredded
  • 2 tablespoons BBQ Seasoning Blend
  • 1 teaspoon Fine Sea Salt to taste
  • 1/2 teaspoon Black Pepper freshly ground
  • 3/4 cup Vegan BBQ Sauce preferably Kansas City style
  • 1/4 cup Water or vegetable broth
For the Vegan Coleslaw
  • 1 cup Cashews soaked in water
  • 1/2 cup Boiled Water for soaking
  • 1 clove Garlic adjust to preference
  • 2 tablespoons Lemon Juice or vinegar
  • 1 tablespoon Maple Syrup or honey
  • 1 tablespoon Apple Cider Vinegar or white vinegar
  • 1 teaspoon Dijon Mustard or yellow mustard
  • 4 cups Power Greens Coleslaw Blend or any cabbage mix
For Assembling
  • 4 buns Buns gluten-free or vegan

Method
 

Prepare the Jackfruit
  1. Drain and rinse the canned young jackfruit under cold water.
  2. Shred the soft parts of the jackfruit, discarding any tough cores.
Cook the Jackfruit
  1. In a large skillet, heat a splash of oil over medium heat.
  2. Add the shredded jackfruit with BBQ seasoning, salt, and black pepper. Cook for about 3-4 minutes.
Add Sauces
  1. Stir in vegan BBQ sauce and water to adjust consistency. Simmer for 2 minutes.
Make the Vegan Coleslaw
  1. Soak cashews in boiled water for 5 minutes, then blend with garlic, lemon juice, syrup, vinegar, and mustard.
Mix Coleslaw
  1. Pour the creamy dressing over the coleslaw mix, tossing everything well.
Assemble Sandwiches
  1. Place jackfruit mixture on each bun, top with coleslaw, and serve immediately.
