Method
 

Step-by-Step Instructions
  1. Start by cutting your bacon into bite-sized pieces. Place in the refrigerator for about 15 minutes, then set aside.
  2. Dice the small golden potatoes into even cubes, soak in cold water for 15 minutes, then drain and pat dry.
  3. In a large skillet, heat olive or avocado oil over medium-high heat for about 2 minutes.
  4. Sprinkle salt, pepper, and Old Bay over the potatoes and cook for about 10 minutes, stirring frequently.
  5. Add the bacon pieces and cook for an additional 4-5 minutes until crisp.
  6. Lower the heat, add minced garlic and cook for 2 minutes until fragrant.
  7. Drizzle pure maple syrup over the mixture and cook for another minute.
  8. Taste and adjust seasonings if needed. Garnish with fresh parsley or chives before serving.
