For the Greek Salsa
  • 1 cup Grape or cherry tomatoes Halved
  • 1 each English cucumber Diced
  • 1 teaspoon Dried dill Can use fresh dill, doubling amount
  • 1/2 cup Kalamata olives Chopped
  • 1/4 each Red onion Finely diced
  • 1/2 cup Feta cheese Crumbled
  • 1/4 cup Fresh parsley For garnish

Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C) and line a sheet pan with parchment paper or aluminum foil.
  2. Pat salmon filets dry with a paper towel and place them skin-side down on the sheet pan. Brush with olive oil and season with salt and pepper.
  3. Bake the salmon uncovered for approximately 15 minutes until opaque and reaches an internal temperature of 145°F.
  4. In a mixing bowl, combine cherry tomatoes, cucumber, dill, olives, red onion, and feta cheese. Toss to combine.
  5. Serve the salmon topped with Greek salsa and lemon wedges, garnished with fresh parsley.
