- In a small bowl, whisk together 4 large eggs, salt, and pepper until well combined.
- Heat a non-stick frying pan over medium-low heat. If using butter, add it to the pan until melted.
- Pour the whisked eggs into the pan, stirring gently, and cook for about 4-5 minutes.
- Sprinkle half of the crispy bacon and half of the cheese onto one side of the eggs.
- Place a flour tortilla on top, pressing down slightly, then flip the tortilla with the egg mixture onto a clean surface.
- Sprinkle the remaining bacon and cheese on top of the tortilla, fold in half, and return to the pan.
- Cook the folded quesadilla for an additional 2-3 minutes on each side until golden brown.
- Remove the quesadilla, let it rest for a minute, and slice into wedges.
