  • 4 pieces Flour Tortilla substitute with corn tortillas for gluten-free
  • 8 ounces Cooked Bacon pre-cook and freeze for quicker prep
  • 4 large Large Eggs fresh eggs ensure best texture
  • 1 cup Shredded Cheddar Cheese can swap for Monterey Jack or pepper jack
Seasoning
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon Butter optional, for richness

Method
 

Step-by-Step Instructions
  1. In a small bowl, whisk together 4 large eggs, salt, and pepper until well combined.
  2. Heat a non-stick frying pan over medium-low heat. If using butter, add it to the pan until melted.
  3. Pour the whisked eggs into the pan, stirring gently, and cook for about 4-5 minutes.
  4. Sprinkle half of the crispy bacon and half of the cheese onto one side of the eggs.
  5. Place a flour tortilla on top, pressing down slightly, then flip the tortilla with the egg mixture onto a clean surface.
  6. Sprinkle the remaining bacon and cheese on top of the tortilla, fold in half, and return to the pan.
  7. Cook the folded quesadilla for an additional 2-3 minutes on each side until golden brown.
  8. Remove the quesadilla, let it rest for a minute, and slice into wedges.
