  • food processor
  • Skillet

Method

Step-by-Step Instructions
  1. Blend the Base: In a blender, combine yogurt, apple butter, Medjool dates, miso paste, vanilla extract, spices, salt, and soy milk. Blend on high until the mixture is silky smooth, about 1–2 minutes.
  2. Combine Chia Seeds: Add chia seeds to the blended mixture, whisking thoroughly to prevent clumping. Allow the mixture to sit for 5 minutes, then whisk again and refrigerate for at least 1 hour.
  3. Make the Crumble: In a food processor, pulse together oats, walnuts, and a couple of Medjool dates until the mixture resembles coarse crumbs.
  4. Sauté the Apples: In a skillet, sauté diced apples with maple syrup, cinnamon, and a pinch of salt for about 3-4 minutes.
  5. Assemble the Pudding: Layer the thick chia pudding at the bottom, add stewed apples, and top with the crunchy crumble.
