Method
 

Preparation
  1. Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. In a medium skillet over medium heat, brown the ground beef with the dry onion soup mix for 5-7 minutes.
  3. Drain excess grease, melt butter in the skillet, and cook the sliced mushrooms for 4-5 minutes.
  4. Add minced garlic and balsamic vinegar, stirring for 1 minute. Mix in flour to create a roux.
  5. Pour in beef broth and add tomato paste, then stir in the reserved ground beef and thyme.
  6. Simmer the mixture for about 10 minutes, covered, until thickened.
  7. Roll out the pie crust on the prepared baking sheet, poke holes with a fork, and bake for 10 minutes.
  8. Stir in frozen peas and carrots into the beef mixture, then cover with the baked pie crust.
  9. Serve the pot pie straight from the skillet for a comforting meal.
